Two important things to remember however is to always cook the meat for its complete time recommended in the recipe recommend time. Secondly, do not remove the lid on the slow cooker. There is no requirement to brown meat beforehand unless the you prefer the look and taste of browned meat.</p>
<p>When cooking in a crock-pot the best flavors will come from whole herbs and spices. Crushed herbs and spices rapidly lose their flavor during the long cooking time, but whole spices keep their flavor during the entire cooking time because they take longer to let go of their flavor.</p>
<p>Crock-pots can be used to make desserts and baked goods as well. You should be sure not to over beat breads and cakes; and should always follow the recommended recipe guidelines. Never add water to the crock-pot unless it specifically says to do so. Always allow cakes and breads to sit and cool for five to seven minutes before taking them out of the pan.</p>
<p>Vegetables like potatoes and carrots should be cut no larger than 1&#8243; thick, and put in the bottom of the pot, since they require more time to cook. Crock-pot cooking can be delicious for both meals and desserts when some basic guidelines are followed.</p>

<p>Shallow-frying includes sauting, sweating and stir-frying.  A frying pan  is usually chosen for shallow-frying, but for large quantities some  kitchens use a shallow tilting pan or brat pan.  Good shallow-frying  requires complete attention and skilled heat control.  Because a small  amount of frying medium is used in relation to the quantity of food  being fried, the food may be easily burnt or poorly cooked.</p>

<p><strong>Principles</strong></p>
<p>1.	Single portions of tender cuts of fish, meat and poultry are suitable for shallow-frying.</p>
<p>2.	Food should be seasoned and sometimes coated with flour, crumbs or egg coating before shallow-frying.</p>
<p>3.	Warm the frying pan and add the frying medium (fat or oil).  A  mixture of butter and oil is recommended.  Butter gives flavour and aids  browning, while the oil can take the heat and reduces the risk of  burning.</p>
<p>4.	It is essential to heat the frying medium before adding the food.   The medium must be very hot in order to seal meat pieces before the  juices run; otherwise the meat will be boiled.  If the food is crumbed,  the medium must be hot enough to seal the outside to prevent absorption  by the crumbs.  The heat must then be lowered to finish cooking at the  point when the crumbs become golden brown.</p>
<p>5.	When the top of the food is seen to be slightly moist, it is apparent  that the heat has penetrated and it is time to turn the food over.</p>
<p>6.	Eggs and fish require a moderate heat to cook evenly without burning at the edges.</p>
<p>7.	Always place fish or crumbed foods best side down, so that after  turning them halfway through cooking the best side is uppermost and  ready to be presented when cooking is completed.</p>
<p>8.	Drain off all of the frying medium before dressing the food on  serving dishes.  (Clean absorbent paper can be used for this process.)</p>

<p><strong>Saute</strong></p>
<p>Saute comes from the French word meaning jump and refers to food tossed  over and over in a frying pan to seal or brown it evenly on all sides.   Very little oil or butter is used.  The pan must be preheated and the  frying medium sizzling before the food is put in.  The saute must then  proceed quickly until it is finished.  A good heat and speed is the  essence of sauting.</p>
<p>The saute is usually only part of the preparation of the dish.  It may  be done to seal or brown meat, to heat cooked meat or fish, or to mix or  coat vegetables.  The pan residue from sauting meat or fish is often  used in the sauce for the dish.  By contrast, shallow-frying usually  involves complete cooking of the food.</p>

<p><strong>Sweat</strong></p>
<p>Vegetables are said to be sweated when they are shallow-fried without  taking colour.  The process is often applied to onions and some other  vegetables, which are literally made to sweat in butter and oil.  The  object of sweating vegetables is to drive off some of the moisture and  to partly cook them.</p>
<p>Some of the subtle flavours are also given up to the frying medium that  is then used in the preparation of the dish.  It must be noted that fat  absorbs flavours well. Sweating requires a moderate amount of fat and  gentle heat.  The food must be stirred frequently to prevent browning  and ensure even cooking.</p>

<p>What does the term mean &#8220;organic meat&#8221; mean? When conditions are met  such that the health needs and natural behavior of the animal are taken  care of, then the philosophy of organic meat is being followed.</p>
<p>Organic livestock are allowed to roam free, within certain bounds of  course, as they would have done when they were wild with fresh air,  fresh water, sunshine, green grass and pasture, etc. They are not feed  any plastic pellets for roughage or other animal byproducts of any sort,  nor are they given antibiotics and hormones. They are, however, allowed  the opportunity to exercise with shelter provided only for their  comfort, not as a means of containment.</p>

<p>Is organic meat treated differently than other meat? Yes! Once a  processing plant is ready to process organic meat, the plant has to  completely shut down the processing system, thoroughly clean it, and  then put it back together in order to process the organic meat so that  there is no &#8220;contamination&#8221; with regular meat. Thus, when you buy  organic meat it will be 100% organic meat with no regular meat included  in it.</p>
<p>Does organic meat taste differently than regular meat? Yes! When  something is fed pure grains (meaning no plastic pellets), allowed free  range (to roam freely around the farm or ranch), is not mistreated or  stressed, not feed hormones and antibiotics, and all the other criteria  that go into organic meat, the end product tastes very different. There  is a more pure taste to it with the flavors being stronger than what you  regularly buy. Often there is less fat as well so you get a better cut  of meat and less byproduct when you buy organic meat.</p>

<p>Is it better for me? The general concensus is &#8220;yes.&#8221; Because the organic  meat has not been fed hormones, you do not ingest hormones either.  Because the organic meat has avoided ingesting plastic pellets, you  avoid the byproducts of that in the meat. Since the organic meat was not  fed other animal byproducts, there is less concern of bacteria being  introduced into the meat while it was alive.</p>
<p>Does it matter if it is certified organic meat? Yes! The rancher or  farmer goes through certification of their processes and their ranches  in order to be certified. The animal feeding, living conditions, health  care practices, slaughtering, and processing is all standardized,  inspected, and certified before any meat is able to be sold as organic  meat.</p>

<p>I was watching the channel &#8220;Discovery Travel and Living&#8221; the other day.  Food related shows are definitely one that catches my attention. They  are a great source of information about food in particular and of course  not to mention the numerous wonderful recipes. Last evening was what I  call a &#8220;foodie evening&#8221; on the channel. This is one reason that I love  Thursdays. There is nice program titled &#8220;Floyd&#8217;s India&#8221; followed by  &#8220;Indian Cooking made easy&#8221; with Anjum Anand hosting it.</p>

<p>In Floyd&#8217;s India, he chooses a destination each time and is acquainting  his audience with the cuisine of the particular place. He actually does  cook some of the traditional or popular recipes. The first episode was  on Rajasthan, a state in India. This week however, he decided to put up  his tent at the popular tourist destination &#8211; Goa. A wonderful episode  for seafood lovers. He cooked fish, crab and even mussels.</p>
<p>A sweet coincidence or must I say a &#8220;fishy coincidence&#8221; that Anjum Anand  too decided to have &#8220;fish&#8221; as her theme for the evening. She cooked  delicious lime rice and served it with traditional Indian fish curry  from the state of Maharashtra (fish cooked in coconut milk and  coriander). Couldn&#8217;t resist it and so it&#8217;s fish for lunch today and also  my theme for the day.</p>
<p>Fishes offer so much variety. Each fish has it own distinct taste adding  that little extra to your dish. So very easy to cook, a little  marination and the right ingredients that make it one of the best dishes  that you have ever cooked or had. The popularity of fish and chips, I  guess does say it all.</p>
<p>A high nutritional value, low in fat and being a rich source of omega 3  fatty acids makes fish a popular choice for a healthy menu. Fish is good  for your heart.</p>
<p>It is definitely an important part of several cuisines whether Chinese,  Thai, American, French or Indian. The style of cooking may differ from  one cuisine to the other however, the final result of a tasty dish is  the same whichever style of cooking or school of thought you decide to  follow. Fish is wholesome food served with just a salad and a slice of  bread. Easy , quick and indeed delicious that&#8217;s how it is.</p>

<p>Not many however, may be well-versed with buying and cooking fish. Here are a few tips while handling fish:</p>
<p>-The smell and the looks of the fish are major indicators which would help you make the right decision while buying fish.</p>
<p>-It should smell fresh. It must definitely not have a stale smell. If that is so, then it sure is a no&#8230;no.</p>
<p>-It must look appealing. Must look fresh and the skin must be firm. When  you touch the skin it must be tight and not leave a depression on the  surface. There must be no discoloration.</p>
<p>-The eyes must be bright and red on the underneath.</p>
<p>-Fish cook really fast and so do ensure that you do not end up overcooking it.</p>
<p>With a variety of ways to cook it, there sure is lot of scope for  experimenting. Each one to his own taste&#8230;that&#8217;s the way it is.</p>

<p>Summer&#8217;s here, and that means that many children will be at home with  more time for snacking. While many would love a cabinet filled with  sweet treats for snacks, it&#8217;s much better if you can get them into the  habit of healthy snacks.</p>
<p>Now how are you going to do that?</p>
<p>The first step is simple to say, harder to put into practice. Simply  start buying healthier treats and leave the junk in the store.</p>
<p>For most people it&#8217;s not quite that simple. But once you can manage it,  it really does become simpler to eat healthier snacks or to give them to  children. There&#8217;s nothing else available in the house.</p>
<p>So what are the kids supposed to snack on?</p>

<p>You can switch them from chips to baked crackers or pretzels. These can  still have some interesting flavors, but be better for you.</p>
<p>Some other ideas take more preparation.</p>
<p>Chop up fruit into a fruit salad, for example. If it will encourage  people to eat it, add some yogurt or even whipped cream (if that&#8217;s what  it takes). Certainly much healthier, yet often a very welcome snack.</p>

<p>My children also love frozen berries. They&#8217;re significantly cheaper than  the fresh ones, and the ones I buy at Costco cost less per ounce than  those sugary fruit snacks. Yet the kids prefer the berries.</p>
<p>You can also chop up some vegetables. Pay attention to the ones people  in your family will actually eat. Don&#8217;t be afraid to include some salad  dressing or hummus as a dipping sauce.</p>
<p>If you have a yard you can even consider growing some good snacking  food. Even if you don&#8217;t have one, cherry tomatoes or other small  varieties of tomato don&#8217;t require a lot of space to grow, yet many  children love them as snacks. They can be eaten right off the vine.</p>

<p>If you have a bit more space and a bit more time a fruit tree works well  also. The house I grew up in had a plum tree in the back yard. Those  were a favorite snack. The ones right off the tree were so much better  than the ones that had gone into the fridge.</p>
<p>Frozen treats are always a big hit. A fruit smoothie is one fairly  simple idea. Throw frozen fruit, apple juice and some honey into the  blender. You decide the exact mix. A banana often goes well in there  also, or even a carrot.</p>

<p>You can also freeze yogurt into popsicles. Get a fairly healthy type; many varieties have significant amounts of sugar added.</p>
<p>Nuts are also a pretty healthy snack. They have a lot of fat, but it&#8217;s  generally of healthier types. A nice trail mix can be a lot of fun.</p>
<p>As everyone gets used to snacking healthier, it no longer feels like  deprivation to leave out the less healthy foods. You may deal with some  grumbling or even feel like complaining yourself at first, but as  everyone gets used to the routine and finds their own favorites it  should get easier.</p>
