Chasseur Lamb Shanks
Ingredients
4-6 lamb shanks
1-2 stalks celery, sliced
150g mushrooms, halved
1 tbsp chopped fresh thyme or 1 tsp dried thyme
535g can Wattie’s Just Add Chicken Chasseur
2 tbsp Wattie’s Tomato Paste
1/2 cup white wine or light red wine e.g. Rosé
500g pkt Wattie’s Frozen Duchesse Potatoes
3 Tbsp finely grated Parmesan cheese
Method
1. Brown the lamb shanks in a dash of oil in a large, flame-proof casserole. Scatter over celery, mushrooms and thyme.
2. Pour in the Wattie’s Just Add Chicken Chasseur, tomato paste and wine and stir together.
3. Place in oven preheated to 160ºC for 2 1/2-3 hours or until lamb is tender. Remove from oven and set aside to rest.
4. Increase oven heat to 220ºC. Place Wattie’s Duchesse Potatoes on baking paper-lined tray and sprinkle with grated Parmesan. Bake for 10-14 minutes.
5. Serve shanks with Duchesse Potatoes and your favourite winter greens.
Crockpot / Slow Cooker Instructions:
Place the ingredients from Steps 1 & 2 into a slow cooker, cover and cook on LOW for approx 8 hours (refer to your user manual). Serve as above.
