Seafood Marinara on Pasta
Ingredients
1 onion, peeled, finely diced
6 large button mushrooms, diced
1 tbsp oil
350 g firm white fish fillets, diced
1/2 cup red wine
12 cooked mussels, diced
400g can Wattie’s Chunky Tomato and Roasted Garlic Pasta Sauce
1/2 cup fresh herbs, like oregano, thyme or parsley
cooked spaghetti pasta for 4
Method
1. Cook the onion and the mushrooms in the oil in a pan for 3-4 minutes over a moderate heat stirring regularly until golden brown but not burnt.
2. Push the onions and mushrooms to one side and add the fish to the pan, browning well. Add the red wine and bring to the boil. Add the mussels, Wattie’s Chunky Tomato and Roasted Garlic Pasta Sauce and herbs and simmer for 3-4 minutes only.
Serve over pasta.
Garnish with grated Parmesan cheese and a sprig of fresh herb if wished.
